This is absolutely amazing!
1 onion, sliced
2 T chopped chipotles in adobo
2 to 3 lbs boned pork buttĀ or shoulder
4 cloves garlic, slivered
salt and pepper
1 T vegetable oil
tortillas
1. Place onion, chipotles, and 1/4 cup water in crock pot, stir to combine. Using a knife, make inscisions all over pork and insert garlic. Season with salt and pepper.
2. Heat a large pan over medium high heat and add oil. Brown pork on all sides, about 8 minutes. Transfer pork to crock pot. Pour 1/2 cup water into pan and stir over low heat with wooden spoon to scrape up browned bits. Pour liquid in to crock pot. Cover and cook on high 6 hours.
3. Remove meat from slow cooker and let cool (I am impatient and did not wait for it to cool) Shred pork using two forks to pull meat apart. Return pulled pork to crock pot and stir to combine with onions, chipotles and juices. Cook on low for an hour.
4. Serve with warm tortillas and choice of toppings.
